Curry Salmon and Potatoes
Spicy and super flavorful
Curry is a great comfort food, and this dish is perfect for days when you just feel like being cozy and need a warm hug.
Ingredients:
4 yellow potatoes, cut into even large chunks
2 fillets of salmon, about 1/2 pound
2 teaspoons of vegetable bouillon diluted in 1 cup of hot water
1 can of coconut milk
1 1/2 tablespoon of yellow curry
1 cup of your favorite tomato sauce
1/2 of a medium yellow onion, cut into even chunks
1/2 of a red bell pepper, cut into even chunks
2 garlic cloves, minced
1/2 of a lemon, juice and zest
Avocado oil
Salt and pepper
Chopped cilantro
Preparation:
1. To a large sauté pan on medium heat add a thin layer of avocado oil, enough to coat the bottom of pan.
2. When hot, add the onions cook until translucent.
3. Add the garlic, curry, bell pepper chunks and the potato chunks. Toss around making sure everything is well coated with the oil and curry.
4. Add the diluted bouillon, tomato sauce, lemon juice and zest and some salt and pepper to taste. After about 3 minutes, add the coconut milk, mix well, and simmer with a half covered pan, until potatoes are almost fully cooked, for about 15 minutes.
5. Next add the salmon fillets and simmer for another 10 minutes in the liquid. Check the seasoning and adjust as needed. Add cilantro at the end for flavor and decoration.
